The terroir is marked by well-drained limestone and clay-limestone soils with fine gravel, providing excellent balance between water retention and drainage, and encouraging deep root systems and naturally low yields. Arnaud Baillot works with careful, plot-specific selection and typically favors sustainable, low-intervention viticulture, including manual work in the vineyard and hand-harvesting at optimal ripeness to preserve freshness and aromatic definition. In the cellar, the grapes are sorted meticulously and often undergo a gentle cold soak before fermentation with indigenous yeasts in temperature-controlled vats. Extraction is kept measured—through delicate punching-down and/or pumping-over—to prioritize finesse over power. Maturation takes place in French oak barrels, with a thoughtful proportion of new oak to add structure and complexity without overwhelming the perfume of Vosne.
