Description

The 2021 Arnaud Baillot Meursault 1er Cru Bouchères is a poised and finely etched expression of white Burgundy from one of Meursault’s most prized premiers crus. Crafted from old-vine Chardonnay on a steep, limestone-rich slope, it captures the tension and elegance of the cooler 2021 vintage. This bottling stands out for its precision, lifted minerality, and the way it balances Meursault’s classic generosity with a distinctly refined, modern touch.

Tasting Notes
In the glass, this Meursault 1er Cru Bouchères shows a bright, pale lemon-gold hue with silvery highlights, suggesting both youth and vibrant acidity. The nose opens with fine, detailed aromas of lemon zest, crisp pear, white peach, and green apple, layered with notes of acacia blossom, crushed oyster shell, and a delicate hint of toasted hazelnut and fresh butter from its élevage. On the palate, the wine is medium to full-bodied yet wonderfully taut, with a core of citrus and stone fruit wrapped in saline minerality. Flavors of Meyer lemon, ripe pear, and yellow plum are framed by subtle brioche, almond cream, and a chalky, almost smoky limestone edge. The acidity is racy but perfectly integrated, giving the wine drive and length, while the oak is discreet and supportive rather than dominant. Still youthful, this 2021 has the structure to age gracefully for 8–12 years from vintage, gaining further complexity, nuttiness, and honeyed depth with time in bottle.

Production
Sourced from the premier cru Bouchères vineyard in Meursault, this wine comes from steep, south-facing slopes with shallow, stony soils rich in limestone and marl—conditions that naturally yield concentrated, mineral-driven Chardonnay. The 2021 vintage was marked by lower yields and a cooler growing season, favoring finesse and aromatic clarity over sheer richness. Grapes are typically harvested by hand at optimal ripeness to preserve freshness and sort carefully in the vineyard and at the winery. Fermentation takes place in French oak barrels, often with indigenous yeasts, allowing a slow, temperature-controlled vinification that builds texture without losing precision. Aging continues in oak (with a measured proportion of new barrels) on fine lees, with occasional bâtonnage depending on the vintage, resulting in a wine that marries Meursault’s classic creaminess with focused minerality and tension.

Food & Serving
This Meursault 1er Cru Bouchères is a natural partner for refined seafood and white meats: think butter-poached lobster, seared scallops, turbot or sole in a beurre blanc, or roast chicken with morels and cream. It also pairs beautifully with richer dishes like veal blanquette, truffled pasta, or subtly aged cow’s milk cheeses such as Comté, Beaufort, or aged Gruyère. Serve at 10–12°C (50–54°F) to let the aromatics open without muting the wine’s freshness. Young bottles benefit from 30–45 minutes in a carafe or a gentle splash decant to fully reveal their complexity, while mature examples can be served directly from the bottle with careful pouring.
