Tasting Notes
In the glass, the 2021 Corton-Charlemagne Grand Cru displays a pale to medium lemon-gold hue with a youthful brightness that hints at its long life ahead. The nose is refined yet expressive, opening with notes of lemon zest, white peach, and green apple, layered over crushed rock, chalk, and wet stone. Subtle hints of toasted hazelnut, brioche, and delicate vanilla emerge with air, framed by a discreet touch of flint and white flowers. On the palate, this wine is full-bodied yet incredibly poised, delivering a core of citrus and stone fruit—Meyer lemon, ripe pear, and golden apple—wrapped in a taut, saline minerality. The oak is beautifully integrated, adding gentle spice and creaminess without ever overpowering the fruit. A spine of vibrant acidity drives the wine through a long, precise finish marked by chalk, citrus peel, and a faint echo of smoke. Production
Sourced from the revered slopes of Corton-Charlemagne in the Côte de Beaune, this Grand Cru Chardonnay grows on steep, well-drained limestone and marl soils that are key to its structure and mineral character. The cool, elevated exposition promotes slow, even ripening—preserving acidity while allowing full flavor development. Grapes are typically hand-harvested at optimal ripeness, with meticulous sorting in the vineyard and the cellar to ensure only the finest fruit is used. Vinification generally involves gentle pressing of whole clusters, followed by fermentation in French oak barrels, a portion of which are new, to add texture and subtle complexity. The wine is then aged on its lees for several months, with careful bâtonnage and minimal intervention, to build depth while preserving the purity and tension that define Corton-Charlemagne.

Food & Serving
This Grand Cru white Burgundy is a superb match for refined, rich dishes such as lobster with drawn butter, scallops in a beurre blanc sauce, turbot or sole meunière, and roasted chicken with morel cream. It also pairs beautifully with veal in light cream sauces and with aged, firm cheeses like Comté or Beaufort. Serve at 10–12°C (50–54°F) to showcase its balance of richness and freshness; too warm and the alcohol and oak may dominate, too cold and the aromatics will be muted. Young bottles will benefit from 30–60 minutes in a decanter or large-bowled glass to allow the nose to open and the texture to relax. With age, decanting should be gentler and shorter, focused mainly on separating any sediment and letting the wine stretch its legs.
