Tasting Notes
In the glass, the 2021 Ao Yun Shangri-La shows a deep, vibrant ruby core with a youthful purple rim, reflecting both concentration and freshness. The nose is layered and expressive, opening with dark fruits such as blackcurrant, blackberry, and mulberry, followed by violet, graphite, sweet spice, and a subtle hint of incense and cedar from careful oak aging.
On the palate, this is a structured yet refined mountain Bordeaux blend—typically dominated by Cabernet Sauvignon and Cabernet Franc, with touches of Merlot and/or Petit Verdot depending on the final assemblage. The attack is poised and precise, with ripe but firm tannins wrapped around a core of cassis, black cherry, and damson. Hints of tobacco leaf, cocoa, dried herbs, and crushed rock underscore its high-altitude origin. The natural acidity is vivid, giving lift and energy to the long, mineral-driven finish. This vintage has excellent aging potential: it can be approached now with sufficient aeration but will reward 10–15 years of careful cellaring, gaining complexity, polish, and tertiary nuances over time.
Production
Ao Yun is produced in the Shangri-La region of Yunnan in southwest China, at altitudes typically ranging from around 2,000 to 2,600 meters above sea level—some of the highest vineyards used for fine red wine anywhere in the world. The terroir is defined by intense sunlight, cool nights, and well-drained, complex mountain soils, which naturally limit yields and preserve freshness. Grapes are harvested by hand from small, scattered village plots, with rigorous selection in the vineyard and at the winery. Vinification is meticulous and parcel-based: the different vineyard sites and varieties are fermented separately, often in small tanks, to capture their individual character. After fermentation, the wines are aged in high-quality French oak—often with a judicious proportion of new barrels—before blending and further maturation to achieve Ao Yun’s signature balance of power, finesse, and terroir expression.
Food & Serving
This 2021 Ao Yun Shangri-La is best showcased alongside refined, protein-rich dishes that can stand up to its structure and intensity. Think dry-aged ribeye, roast lamb with rosemary, braised short ribs, or game meats such as venison or duck. It also works beautifully with umami-rich dishes like mushroom ragout, truffle-infused preparations, and aged hard cheeses such as Comté, Manchego, or mature cheddar. Serve at 16–18°C (60–64°F) in large Bordeaux-style glasses. Decanting is strongly recommended—give it at least 1–2 hours in a decanter if drinking in its youth to soften the tannins and fully unlock the aromatic complexity; older bottles will need slightly less time.
