Production
Ao Yun’s vineyards are planted on dramatic, terraced slopes near Shangri-La in China’s Yunnan province, overlooking the Upper Mekong River and framed by Himalayan peaks. The terroir is defined by high elevation, intense daytime sunshine, cool nights and well-drained, predominantly rocky and alluvial soils—conditions that slow ripening and preserve freshness, while allowing grapes to develop great depth of flavor. Grapes are typically harvested by hand, plot by plot, with meticulous selection in both the vineyard and the cellar to ensure only the healthiest, optimally ripe bunches are used. In the winery, Ao Yun works with a blend dominated by Cabernet Sauvignon plus other Bordeaux varieties (and occasionally a small proportion of other complementary grapes), vinified in small, temperature-controlled lots to respect the character of each parcel. The wine is then matured in a careful mix of French oak, with a judicious use of new barrels, to polish texture and add subtle complexity without overwhelming its mountain-fruit purity.

The 2021 Ao Yun Shangri-La is a natural partner for refined, savory dishes built around red meat and umami-rich flavors. Think dry-aged ribeye, roast lamb with rosemary and garlic, Peking duck, slow-braised short ribs, or mushroom-based dishes such as porcini risotto and truffle-infused cuisine. It also works well with aged hard cheeses and richly spiced, but not overly hot, Chinese or pan-Asian dishes (such as five-spice beef or soy-braised pork).
