Tasting Notes
In the glass, this Puligny-Montrachet shows a pale lemon-gold color with green highlights, reflecting its youthful energy and freshness. The nose opens with precise aromas of lemon zest, white peach and green apple, layered with notes of white flowers, crushed stone, and a subtle, classy oak influence—think toasted hazelnut and a hint of crème fraîche. On the palate, the wine is taut, linear and finely chiseled, with a vibrant acid backbone typical of the 2021 vintage. Citrus and orchard fruit are framed by saline minerality and gentle spice, giving a sense of both clarity and depth. The texture is silky yet refreshing, with excellent length and a mouthwatering, chalky finish. In magnum, this cuvée should evolve beautifully over 8–12+ years, gaining more complexity, nuttiness and creaminess while retaining its Puligny precision.

Production
La Rue au Vaches is a single vineyard (lieu-dit) in Puligny-Montrachet, planted on classic Burgundian limestone and clay soils that are particularly suited to Chardonnay. The site’s well-drained, stony subsoils contribute to the wine’s focus and minerality, while the cool climate of 2021 preserved freshness and aromatic detail. Grapes are typically harvested by hand at optimal ripeness to ensure careful selection in the vineyard. In the cellar, Alvina Pernot favors a restrained, Burgundian approach: gentle pressing, fermentation in French oak barrels (with a thoughtful, not excessive, use of new oak), and aging on fine lees to build texture and complexity without overshadowing the terroir. The wine is then lightly fined and filtered, preserving purity and precision before bottling in magnum.

Food & Serving
This Puligny-Montrachet is a natural partner for refined seafood and elegant white meat dishes. Think butter-poached lobster, scallops in a light beurre blanc, turbot or sole, roast chicken with morels, or veal blanquette. It also pairs beautifully with delicate cheeses such as Comté, aged Gruyère or a young, creamy goat cheese. Serve at around 10–12°C (50–54°F) to allow the aromatics and texture to fully express themselves without losing freshness. Younger bottles benefit from a brief 30–45 minute decant, particularly in magnum, to open up the nose and harmonize the oak and fruit.
