Tasting Notes
In the glass, this Grand Cru shows a luminous, pale gold colour with hints of green at the rim, signalling both youth and intensity. The nose is immediately complex and layered: ripe citrus and Meyer lemon mingle with white peach and pear, followed by notes of acacia blossom, fresh almonds, and a fine, chalky minerality. Subtle nuances of toast, hazelnut, and crème pâtissière emerge with air, speaking to carefully judged oak and serious underlying concentration.
On the palate, the wine is full-bodied yet incredibly poised, with a powerful core of ripe stone fruit and citrus wrapped in a tight, mineral frame. There is a palpable density and dry extract typical of Bâtard-Montrachet, balanced by vibrant acidity that keeps everything lifted and long. Flavours of lemon oil, baked apple, salted butter, and hazelnut cream unfold slowly, finishing on a savoury, saline note that lingers for minutes. In magnum, this 2021 has excellent aging potential: it will start to show more complexity and tertiary nuances after 7–10 years, and, properly cellared, can evolve beautifully for 15–20 years or more.
Production
This Bâtard-Montrachet Grand Cru hails from one of the Côte de Beaune’s most prized terroirs, positioned just below the legendary Montrachet itself, on stony, well-drained limestone-clay soils that naturally limit yields and concentrate flavour. The cool continental climate of Burgundy, combined with the specific exposition of Bâtard, gives a combination of ripeness, weight, and mineral tension that is unique to this vineyard. Grapes are hand-harvested at optimal maturity in small crates to preserve fruit integrity, then gently pressed to extract pure, fine juice. Fermentation takes place in French oak barrels, with a judicious proportion of new oak to frame rather than dominate the wine. Extended lees aging with bâtonnage (as vintage conditions dictate) adds texture and complexity, followed by careful élevage and bottling in magnum to promote slow, harmonious development in the cellar.
Food & Serving
This is a majestic white Burgundy best matched with refined, richly flavoured dishes: think butter-poached lobster, turbot with beurre blanc, scallops in a truffle cream sauce, or roasted free-range chicken with morels. It also pairs beautifully with veal in light cream sauces, seared foie gras, and aged, firm cheeses such as Comté, Beaufort, or a well-aged Gruyère. Serve at around 11–13°C (52–55°F) to allow the aromatics to fully express themselves without muting the structure. Given its youth and concentration in magnum format, decanting for 45–90 minutes is recommended if drinking in the first 8–10 years after the vintage, to help the wine open and reveal its full range of aromas and texture.
