Tasting Notes
In the glass, the 2021 Finca Dofí shows a deep, vibrant ruby color with a luminous edge that hints at both concentration and finesse. The nose is lifted and pure, with notes of fresh red cherry, wild strawberry and blood orange intertwined with peach skin, dried Mediterranean herbs, anise, and a subtle mineral smokiness from the slate soils.
On the palate, the wine is at once powerful and supremely elegant. Silky, rounded tannins frame layers of ripe red fruit, hints of stone fruit, sweet spices, and a fine earthy nuance reminiscent of top Barolo, but wrapped in the warmth and succulence of Priorat. The balance between ripeness, freshness and mineral grip is striking, leading to a long, precise finish with echoes of citrus peel, herbs and graphite. In a 5L Methusalem, this wine will evolve very slowly and gracefully, with an optimal drinking window stretching well beyond 15–20 years from the vintage, gaining complexity, truffle notes and deeper savory tones over time.
Production
Finca Dofí is sourced from steeply sloped vineyards in the heart of Priorat, oriented predominantly to the north, which helps preserve freshness in a region known for its intense summer heat. The vines grow in the classic llicorella soils – a hard, fractured mix of red slate and quartz of volcanic origin – forcing the old roots to burrow deep in search of water and nutrients, naturally limiting yields to very small quantities per hectare. The blend is based mainly on Garnacha, often complemented by a proportion of Cariñena and small amounts of other local varieties, harvested by hand at optimum ripeness and carefully sorted in the cellar. Vinification typically involves gentle extraction to emphasize purity and finesse over sheer power, followed by aging in quality oak (often larger or well-integrated barrels) to add texture and complexity without masking the vineyard character.
Food & Serving
This Methusalem of Finca Dofí is made for the table and for sharing. It pairs beautifully with slow-braised lamb shoulder, roast duck with herbs, Iberico pork, game birds, and richly flavored dishes featuring mushrooms, truffle, or roasted root vegetables. It also complements aged Manchego or other hard sheep’s cheeses. Serve at 16–18 °C; in a large format like this, allowing the wine to come slowly up from cellar temperature is ideal. Decanting is strongly recommended—at least 1–2 hours in advance in its youth, and longer if you intend to explore its full aromatic spectrum over an evening.
