Tasting Notes
In the glass, the 2021 Shelter Tempranillo shows a deep, vivid ruby core with garnet hues at the rim, signaling both concentration and freshness. The nose is layered and complex: black cherries and dried figs intertwine with cocoa, tar and cedar, slowly revealing hints of dill, rose petals and subtle spice as the wine opens in the glass. On the palate, the wine is firmly structured yet succulent, with a muscular backbone of fine, ripe tannins supporting dense, fruit-driven flavors. Ripe red berries, dried apricots and a touch of anise seed unfold across the mid-palate, carried by vibrant acidity and a savoury undertone. The finish is long and persistent, echoing with juicy, mature red fruit and gentle spice. Enjoyable now with a good decant, it has the structure and concentration to evolve gracefully over the next 5–8 years, gaining further complexity and softness.

Production
The grapes for Atlas Swift Shelter Tempranillo come from Cederberg, one of South Africa’s highest and most isolated wine-growing areas, where cool nights, intense sunlight and rugged mountain soils yield grapes of excellent natural balance and character. Only the healthiest bunches were picked by hand, then carefully sorted before being transferred to small open-top fermenters. Fermentation took place on the skins, with pump-overs carried out twice daily to gently extract colour, flavour and round, ripe tannins. To keep the focus squarely on fruit and terroir, maturation occurred in seasoned French oak barrels (3rd and 4th fill), deliberately limiting the influence of oak-derived aromas while allowing the wine to integrate and gain texture.

Food & Serving
This Tempranillo is a natural partner for flavourful, herb-laden dishes—think grilled or roasted meats such as lamb, beef or game, especially when rubbed with rosemary, thyme or smoked paprika. It also shines alongside mature hard cheeses, particularly aged Gouda, which mirrors the wine’s depth and savoury complexity. Serve at 16–18°C, ideally after decanting for 45–60 minutes to allow the aromatics to fully unfurl and the tannins to soften, revealing the wine’s layered, elegant core.
