2021 Ai Galli Selezioni Sauvignon is a refined, single-varietal Sauvignon Blanc from the Lison Pramaggiore DOC in northeastern Italy, crafted with a quiet confidence that comes from working the same soils for decades. It marries Italian warmth and generosity with the crisp precision more often associated with Alpine Sauvignon, offering a wine that is both immediately charming and surprisingly complex. Rooted in Ai Galli’s philosophy of “Amore, Passione e Tradizione,” this cuvée showcases low-yield vineyards and meticulous cellar work to highlight purity of fruit and terroir.
Tasting Notes
In the glass, this Sauvignon presents a bright, pale straw-yellow color with clear green highlights that signal freshness and youthful energy. The nose is expressive yet elegant, opening with aromas of yellow stone fruit and ripe citrus, layered with notes of elderflower, fresh-cut herbs, and a subtle hint of red berry that adds an intriguing twist.
On the palate, the wine is fresh and supple, with a silky texture supporting a core of vibrant fruit. Flavors of lemon zest, white peach and crisp green apple are woven together with floral and faintly yeasty nuances from its time on fine lees. The acidity is lively but balanced, giving the wine both lift and length, while a gentle, persistent finish underlines its finesse and elegance. Production
The grapes for Ai Galli Selezioni Sauvignon come from the flat, well-exposed vineyards of Lison Pramaggiore, an area influenced by Adriatic breezes and characterized by alluvial, mineral-rich soils that favor aromatic whites with good structure. Vines are closely planted and yields per vine are deliberately kept low to intensify flavor concentration and maintain excellent natural acidity. Harvest is carried out by hand in the first ten days of September, allowing for careful selection of perfectly ripe, healthy clusters. After a short pre-fermentation maceration to gently extract aromatics, the must is transferred to stainless-steel tanks, where fermentation proceeds at a controlled 18–20 °C for around 10 days. The wine is then matured on fine lees in stainless steel for several months to build texture and complexity, followed by additional bottle aging before release.
Food & Serving
This Sauvignon is a natural partner for delicate, refined dishes where freshness and nuance are key. Serve it with crudo or carpaccio of white fish, simply grilled seafood, shellfish, and seasonal vegetable dishes such as asparagus, spring peas or light vegetable risotti. It also pairs beautifully with sushi, ceviche, and fresh goat cheeses. For optimal expression, serve at 8–10 °C in medium-sized white wine glasses. Decanting is not essential, but opening the bottle 15–20 minutes before serving will allow the floral and fruit notes to fully unfold.
