Tasting Notes
In the glass, it typically shows a deep, dense ruby colour with youthful intensity. The nose is layered and expressive, offering dark berries, black cherry, plum, violets, toasted spice, cocoa, and subtle mineral and oak nuances. On the palate, it is concentrated and full-bodied, with ripe dark fruit, firm yet polished tannins, and a long, structured finish. The magnum format helps preserve freshness and development over time, and this wine has excellent ageing potential, gaining complexity over many years in bottle.

Production
Aalto PS comes from selected old-vine parcels in Castilla y León, sourced from prized vineyards that contribute depth, concentration, and character. The region’s continental climate, marked by hot days, cool nights, and low rainfall, encourages small, flavour-packed grapes with natural structure. Vinification is carried out with a focus on expressing the quality of the fruit and individual vineyard sites, followed by careful ageing in oak to build texture and complexity without overwhelming the wine’s core.

Food & Serving
This is an ideal wine for rich dishes such as roast lamb, grilled ribeye, beef stew, game, or slow-cooked Iberian pork. It also works beautifully with aged Manchego and other mature cheeses. Serve at around 16–18°C, and decant for at least 1–2 hours if drinking young to allow the wine to open fully.
