The 2021 Aalto PS Magnum is the flagship wine from one of Ribera del Duero’s most acclaimed producers, bottled here in the generous 1.5L format for even greater refinement and longevity. PS stands for “Pagos Seleccionados” – a rigorous selection of Aalto’s finest, low-yield vineyard parcels, chosen only in vintages that meet the exacting standards of winemaker Mariano García and co-founder Javier Zaccagnini. Crafted entirely from the estate’s best Tinto Fino (Tempranillo) fruit and raised in 100% new oak, this is a deeply concentrated, ageworthy Spanish red that ranks among the very top wines of the region.

Tasting Notes
In the glass, the 2021 Aalto PS shows a dense, almost opaque purple-black core with a vivid ruby rim, signaling both youth and concentration. Swirl the glass and you’ll find richly layered aromas of ripe blackberries, black plum and crème de cassis, wrapped in notes of graphite, dark chocolate, espresso, sweet baking spice and hints of dried herbs and mineral dust typical of great Ribera del Duero. On the palate, the wine is powerful yet finely sculpted, delivering a rush of ripe, dark fruit framed by vibrant acidity and beautifully polished, velvety tannins. Flavors of black cherry, mulberry and blueberry compote are interwoven with nuances of licorice, tobacco leaf, toasted oak and a subtle, savory earthiness. The new oak is luxurious but already well integrated, adding structure and complexity without overshadowing the fruit. The finish is long, persistent and impressive, with a core of mineral-driven freshness that promises a long life ahead. In magnum format, this 2021 PS has outstanding aging potential: it will reward cellaring for 10–20 years or more, gaining tertiary notes of leather, cigar box and truffle while the tannins continue to soften and harmonize.

Production
Aalto PS is sourced from a selection of Aalto’s most exceptional, old-vine Tinto Fino plots scattered across top sites in Ribera del Duero, many planted on poor, well-drained soils of clay, limestone and gravel at high altitude. These demanding conditions, combined with large diurnal temperature swings, produce small, intensely flavored berries with superb natural acidity. Harvesting is carried out by hand, parcel by parcel, with meticulous sorting in the vineyard and again in the cellar to ensure only the finest fruit makes it into the blend. The grapes are typically destemmed and fermented in stainless steel or small tanks with close temperature control to preserve aromatic purity and extract fine tannins. After fermentation, the wine is aged exclusively in 100% new oak barrels (predominantly French, often with some carefully chosen American oak), where it undergoes malolactic conversion and matures for an extended period, building its trademark depth, structure and complexity before bottling in magnum.

Food & Serving
This is a commanding, gastronomic red best suited to richly flavored dishes such as grilled or roasted lamb, aged ribeye steak, Iberico pork presa, venison, or slow-braised beef cheeks. It also pairs beautifully with hearty stews, roasted root vegetables, wild mushrooms, and mature hard cheeses like Manchego, Comté or aged Gouda. Serve at 16–18°C (60–64°F) to let the aromatics fully express themselves without the alcohol dominating. Given the wine’s youth and concentration, especially in magnum, decanting is highly recommended: 2–3 hours in a wide-bottomed decanter will help the tannins relax and allow the layered fruit, spice and mineral notes to unfold.
