Tasting Notes
In the glass, the 2021 Aalto PS shows a deep, opaque purple-black core with a vivid garnet rim that hints at its youth and concentration. The nose is intense and layered: ripe blackberries, black cherries and plum compote are interwoven with graphite, dark chocolate, violet, espresso, sweet baking spices and a subtle mineral smokiness from the new oak. On the palate, the wine is full-bodied and powerful yet remarkably poised. Dense black fruit—cassis, blackberry and damson—sits at the core, wrapped in finely grained, beautifully integrated tannins. Notes of licorice, cedar, toasted cocoa nibs, fresh herbs and a stony, almost saline minerality bring complexity and lift. The acidity is fresh and well-defined, keeping the richness in check and giving the wine real drive and precision. The finish is long, refined and persistent, with lingering dark fruit, spice and mineral tones. In standard format, Aalto PS is already known for its excellent cellaring capacity; in Jeroboam, the slower evolution extends the drinking window considerably. Enjoyable with a long decant in its youth, it will reward 15–25 years of careful cellaring, developing more truffle, leather and savory nuances over time.

Production
Aalto PS is sourced from meticulously selected old-vine parcels of Tinto Fino (Tempranillo) in Ribera del Duero, many with vines over 60 years old rooted in a patchwork of high-altitude clay-limestone, sandy and pebbly soils. These varied, well-drained terroirs and the region’s continental climate—hot days, cool nights—concentrate flavor while preserving acidity and structure. Grapes are hand-harvested in small boxes, with rigorous selection both in the vineyard and on sorting tables to ensure only the finest clusters go into the PS blend. Fermentation takes place in temperature-controlled tanks, often with careful extraction to preserve finesse over sheer power. The wine is then aged entirely in new oak barrels (predominantly French, with some carefully chosen American oak), allowing it to gain complexity, polish its tannins and develop its signature combination of richness, depth and elegance before bottling into large formats such as this Jeroboam.

Food & Serving
This is a serious gastronomic wine that shines with richly flavored dishes: think slow-braised lamb shank, roast suckling pig, aged ribeye or côte de boeuf, venison stews, and other game-based cuisine. It also pairs beautifully with truffle-infused dishes, roasted root vegetables, mushroom ragù, and hard, aged cheeses such as Manchego curado or Parmigiano Reggiano. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and balance. Given its concentration and youth, decanting is highly recommended—at least 2–3 hours for current drinking, and even longer for maximum expression. In mature stages, a gentle 1–2‑hour decant is sufficient to let the wine fully open while preserving its more delicate tertiary notes.
