Tasting Notes
In the glass, the 2021 Aalto shows a deep, luminous ruby color with violet reflections that hint at its youth and vitality. The nose is intense and layered, opening with ripe black fruit—blackberry, black cherry, and plum—supported by notes of licorice, roasted coffee, sweet baking spices, and a touch of fine tobacco and cocoa, all framed by discreet, high-quality oak. On the palate, the wine is full-bodied and mouth-filling yet beautifully poised, with a lively spine of acidity that keeps it lifted and fresh. Concentrated dark fruit is interwoven with flavors of licorice, spice, and subtle toast, leading into a long, structured finish marked by polished tannins and hints of cedar and espresso. In this Jeroboam format, the wine’s evolution is slower and more graceful, giving it an extended drinking window—already engaging in its youth after decanting, but with excellent aging potential over 12–20 years, gaining further complexity, silkier texture, and more tertiary notes with time.

Production
Aalto 2021 is produced from 100% Tinto Fino (the local name for Tempranillo) grown in prime sites across Ribera del Duero, from very old vines aged approximately 40 to 80 years. These low-yielding vineyards, rooted in a mosaic of high-altitude soils—ranging from clay-limestone to sandy and gravelly plots—contribute both depth and elegance to the final blend. Grapes are carefully harvested by hand to ensure optimal ripeness and selection, then fermented in tapered stainless-steel tanks to enhance extraction and preserve aromatic purity. After fermentation, the wine is aged for 18 months in oak barrels, with around 50% new French oak and the remainder in one- to three-year-old French and American oak, delivering complexity and structure while maintaining impeccable balance between fruit and wood.

Food & Serving
This 2021 Aalto Jeroboam is a natural match for richly flavored dishes such as grilled or roast lamb, dry-aged beef, ibérico pork, game birds, and slow-cooked stews like rabo de toro or ossobuco. It also pairs beautifully with hard, mature cheeses, truffled dishes, and mushroom-based recipes. Serve at 16–18°C (60–64°F) to highlight both its fruit and structure. Given its youth and concentration, decanting is highly recommended: allow at least 1–2 hours in a large decanter if drinking now, and even longer for maximum expressiveness—particularly important for a Jeroboam, where oxygenation takes more time.
