The nose is complex and slow to reveal itself, opening with notes of ripe citrus (lemon curd, pomelo) and orchard fruits (Williams pear, yellow apple), followed by layers of white flowers, crushed chalk, subtle toasted hazelnut, and a touch of fresh brioche. With air, deeper tones emerge—hints of vanilla pod, warm spice, and a delicate flinty reduction that speaks of great Chardonnay on limestone. On the palate, this is full-bodied and powerful but never heavy, with a beautifully woven texture that combines creaminess and tension. Ripe stone fruits (white peach, apricot) mingle with lemon zest, almond cream, and a fine saline edge that keeps the wine lifted. Production
This Grand Cru is sourced from the prestigious Bâtard-Montrachet vineyard, straddling the communes of Chassagne-Montrachet and Puligny-Montrachet in the Côte de Beaune. The terroir is classic for great white Burgundy: limestone-rich soils with layers of marl and clay that give both power and precision, along with a slightly lower-lying, more sheltered position that encourages ripeness and depth. Thomas Morey works his parcels with an emphasis on soil health and careful canopy management to achieve balance and concentration. Grapes are hand-harvested at optimal ripeness, with strict sorting in the vineyard and at the winery to ensure only the best fruit makes it into the final wine. Whole clusters are gently pressed to preserve purity and finesse, and the must is allowed to settle before fermentation in French oak barrels, a portion of which are new. The wine is then aged on fine lees for an extended period, with measured bâtonnage depending on the vintage, to build texture and complexity while maintaining freshness. Bottling is carried out with minimal intervention to protect the wine’s expression of place.

The 2020 Thomas Morey Bâtard-Montrachet Grand Cru is a natural partner for refined, richly flavored dishes. It shines with butter-poached lobster, scallops in a Champagne or beurre blanc sauce, turbot or sole with a creamy morel or truffle sauce, and roasted poultry such as Bresse chicken with cream and morels. It also pairs beautifully with veal blanquette, delicate veal sweetbreads, and high-quality, not overly pungent cheeses like aged Comté, Beaufort, or a well-aged Gruyère. For optimal enjoyment, serve at 10–12°C (50–54°F); too cold and you’ll mute the aromatics, too warm and the richness may overshadow the tension. In its youth, decanting for 30–60 minutes is recommended to help the wine open up and fully express its layers. As it gains bottle age, gentler aeration—simply opening the bottle 30 minutes before serving—will usually be sufficient.
