Tasting Notes
In the glass, the 2020 Quilceda Creek Cabernet Sauvignon shows an opaque, deep ruby to nearly inky purple hue, hinting immediately at its concentration. The nose is intensely expressive, with layers of blackcurrant, ripe blackberry, and black cherry interwoven with notes of dark chocolate, espresso, graphite, and warm baking spices. Subtle hints of cedar, violet, and crushed rock add lift and complexity.
On the palate, this is a full-bodied, richly textured Cabernet with impeccably polished tannins and a core of dense, dark fruit. Production
Quilceda Creek sources fruit for this Columbia Valley Cabernet Sauvignon from some of Washington’s most coveted vineyard parcels, characterized by well-drained, ancient glacial and alluvial soils that naturally limit yields and intensify flavor. The region’s warm days, cool nights, and long growing season allow Cabernet Sauvignon to achieve full phenolic ripeness while retaining freshness and structure. Grapes are typically harvested by hand at optimal ripeness, with careful sorting to ensure only pristine clusters make it into the fermenters. Vinification focuses on precision and purity of fruit, employing temperature-controlled fermentation and extended maceration to extract color, tannin, and aromatic complexity. The wine is then aged in high-quality French oak barrels (a significant proportion new), where it gains additional depth, texture, and aromatic refinement before blending and bottling.

This powerful yet refined Cabernet Sauvignon is a natural partner for richly flavored dishes such as grilled or pan-seared ribeye, prime rib, lamb chops, or slow-braised short ribs.
