Tasting Notes
In the glass, the 2020 Ribbon Vale Cabernet Sauvignon shows a deep, saturated ruby-purple hue, hinting at both concentration and youth. The nose opens with blackcurrant, mulberry and dark plum, layered with bay leaf, cedar, graphite, cocoa and a gentle lift of dried herbs and violets—very much in the refined, Bordeaux-inspired Margaret River style. On the palate, the wine is medium to full-bodied with a core of cassis, blackberry and black cherry framed by finely knit tannins and lively, integrated acidity. Subtle notes of tobacco leaf, cigar box, mocha and pencil shavings add complexity as it moves across the palate. The finish is long and persistent, with a savoury, almost mineral edge that keeps the rich fruit in check. Still youthful now, it will benefit from a few years in bottle; expect it to drink beautifully over 10–15 years from vintage, developing more tertiary notes of leather, truffle and dried herbs with time.

The Ribbon Vale vineyard lies in the Wilyabrup area of Margaret River, a coastal zone moderated by the Indian Ocean, providing a long, even growing season ideal for Cabernet Sauvignon. Gravelly, well-drained soils over clay encourage deep root systems and naturally restricted yields, contributing to intensity and structure. Grapes are typically harvested by hand at optimal ripeness to preserve freshness and purity of fruit. In the cellar, Moss Wood employs traditional, gentle vinification: extended skin contact for colour and tannin development, followed by maturation in quality oak barriques (with a portion of new French oak) to build complexity without overwhelming the fruit. The result is a Cabernet that combines ripe Australian fruit expression with classical balance and age-worthy structure.

This 2020 Moss Wood Ribbon Vale Cabernet Sauvignon is a natural partner for rich, savoury dishes such as roast lamb with rosemary, grilled ribeye steak, venison, or slow-braised beef short ribs. It also works beautifully with hard cheeses like aged cheddar or Comté and with mushroom-based dishes that echo its earthy, savoury notes. Serve at 16–18°C (60–64°F) for optimal expression. Decanting for 1–2 hours in its youth will help open up the aromatics and soften the tannins; as it ages, a shorter decant primarily for sediment management will be sufficient.
