The 2020 L'Aventure Estate Optimus is a bold, estate-grown proprietary red that captures the energy and individuality of Paso Robles in a single glass. Crafted by Bordeaux-trained winemaker Stephan Asseo, this blend of 58% Syrah, 31% Cabernet Sauvignon and 11% Petit Verdot marries Old World finesse with New World freedom. Tasting Notes
In the glass, the 2020 Optimus shows a vibrant medium ruby to deep garnet hue, with a youthful, glossy brightness around the rim. The nose opens with pure red and black berry aromatics—think wild raspberry, blackcurrant and blackberry compote—layered with earthy, autumnal tones of forest floor, dried leaves and graphite, lifted by notes of crushed violets, baking spice and a touch of cracked pepper. On the palate, this is medium to full-bodied yet remarkably fresh, with finely grained tannins that feel polished rather than heavy. Juicy red and black fruits are framed by hints of cocoa, cedar, subtle licorice and savory herbs, while a floral perfume carries through into the long, persistent finish. The balance of ripe fruit, acidity and structure suggests excellent aging potential: it is already approachable now with a short decant, but will reward 8–15 years in the cellar as the Syrah’s spice, the Cabernet’s backbone and the Petit Verdot’s intensity harmonize further.

Production
L'Aventure’s estate vineyards lie in the cooler, elevated western reaches of Paso Robles, in the Willow Creek District, where rolling hills of pebble-strewn, calcareous (limestone-rich) soils provide excellent drainage and naturally low yields. This unique terroir—often likened to a Californian echo of the Rhône—allows grapes to ripen fully by day while retaining freshness thanks to cool ocean-influenced nights. Fruit for Optimus is carefully harvested by hand at optimal phenolic ripeness, with a focus on tannin maturity rather than simply sugar levels. In the cellar, lots are vinified separately, typically with temperature-controlled fermentations to preserve purity of fruit and aromatic complexity. The final blend of Syrah, Cabernet Sauvignon and Petit Verdot is assembled after élevage in high-quality French oak, which adds polish, texture and subtle spice without overwhelming the character of the estate.

Food & Serving
This is a versatile, gastronomic red that shines with richly flavored dishes: think grilled ribeye, lamb chops with rosemary, slow-braised short ribs, duck confit or a mushroom and truffle risotto. Its structure and freshness also make it a fine partner for aged hard cheeses and charcuterie. For optimal enjoyment, serve at 16–18°C (60–64°F). Decant for 1–2 hours in its youth to allow the aromatics and tannins to fully open; as it matures, a shorter 30–45 minute decant will be enough to reveal its layered complexity.
