The nose is intensely expressive: dark cherries and black raspberries fold into notes of black licorice, iodine, graphite and a distinct mineral edge reminiscent of oyster shell and crushed rock. On the palate, the wine is at once classic and modern: generous, polished fruit wrapped in structure and precision. Layers of perfumed dark berries, plum and kirsch are supported by fine, almost powdery tannins and a lifted, mouthwatering acidity that keeps everything in perfect balance. Production
Estate Côte a Côte is sourced entirely from L’Aventure’s own vineyards in the Willow Creek District of Paso Robles, an area often likened to California’s answer to the Rhône. The estate sits on rolling hills with siliceous and highly calcareous soils, which naturally limit yields and impart the wine’s pronounced mineral backbone. The climate here is defined by warm, sunny days tempered by cool ocean-influenced nights, allowing for extended hang time and full phenolic ripeness without sacrificing freshness. The blend is 45% Grenache, 30% Syrah and 25% Mourvèdre, harvested by hand at optimal ripeness and rigorously sorted to ensure only the best fruit makes it into the final cuvée. Vinification is guided by Asseo’s Bordeaux-trained precision and his Paso Robles freedom: careful extraction, temperature control, and aging in French oak (with a measured use of new barrels) to build texture, polish the tannins and frame, rather than mask, the character of the terroir.
