In the cellar, the grapes are gently pressed and allowed to ferment in oak barrels, a proportion of which are new, with élevage on fine lees to build texture and complexity. The use of oak is masterfully judged—present but never dominant—allowing the underlying terroir of Bâtard-Montrachet and the hallmark Ramonet freshness to shine through.
