Production
Hacienda Monasterio is situated on the fabled ‘Golden Mile’ of Ribera del Duero, between Pesquera and Valbuena de Duero, where vineyards sit at altitude on predominantly limestone and chalky soils with some clay and gravel. This BIO cuvée is sourced from organically farmed estate vineyards, tended with low yields and careful canopy management to ensure optimal ripeness and concentration. Harvest is carried out by hand, parcel by parcel, with strict selection of bunches both in the vineyard and at the sorting table. In the winery, the grapes are typically destemmed and fermented in temperature-controlled vats, with a focus on gentle extraction to preserve fruit purity and finesse. The wine is then aged in French oak barrels, a high proportion of which is new or recent, for well over a year, allowing it to gain structure, aromatic complexity, and polish before bottling without unnecessary manipulation.

The 2020 Hacienda Monasterio BIO is a superb match for grilled or roasted meats—think lamb chops with rosemary, ribeye steak, slow-cooked beef cheeks, or Iberico pork.
