Sourced from cool-climate, limestone-rich vineyards in Robertson, this sparkling wine offers finesse, vibrant acidity, and a beautifully poised creaminess. As one of South Africa’s benchmark Blanc de Blancs, it has helped cement the country’s reputation for world‑class traditional-method sparkling wines.

Tasting Notes
In the glass, this Blanc de Blancs presents a pale lemon hue with a fine, persistent mousse and delicate strings of bubbles that signal careful secondary fermentation and extended lees aging. The nose opens with pure citrus notes—think Meyer lemon and lime zest—layered with green apple, white peach, and hints of brioche, almond, and crushed oyster shell. On the palate, it is taut and focused yet creamy, with lively acidity that drives flavors of lemon curd, crisp pear, and Granny Smith apple. Subtle notes of toasted hazelnut, brioche and chalky minerality add depth and length, leading to a clean, dry, and elegantly saline finish. This vintage has the structure and acidity to age gracefully for 5–8 years from release, steadily developing more autolytic complexity—brioche, cream, and nutty nuances—while retaining its core freshness.

Production
The Chardonnay for this Blanc de Blancs comes from Graham Beck’s Robertson vineyards, where cool nights and limestone-rich soils promote slow ripening, excellent natural acidity, and a distinct mineral edge—ideal conditions for premium sparkling wine. Grapes are typically hand-harvested in the early morning to preserve freshness, then gently whole-bunch pressed, with only the finest cuvée fraction used. Primary fermentation takes place mainly in temperature-controlled stainless steel tanks, with a portion sometimes matured in neutral French oak to add texture and complexity. The base wines are then blended and bottled for secondary fermentation following the traditional method (Méthode Cap Classique), after which the wine spends an extended period on its lees—often around 36 months or more—before disgorgement and a carefully judged dosage to achieve a finely balanced brut style.

Food & Serving
This Blanc de Blancs is a natural match for fresh oysters, sashimi, ceviche, and delicately prepared white fish, where its acidity and minerality can truly shine. It also pairs beautifully with goat’s cheese, soft-rind cheeses, sushi, tempura, roast chicken with lemon and herbs, and light seafood pastas. Serve well-chilled, ideally at 6–8°C (43–46°F), in a flute or tulip-shaped sparkling wine glass to capture its aromatic nuance and fine bubbles. Young bottles can be enjoyed straight after opening, though a brief 5–10 minutes in the glass allows the wine to open up; extended decanting is generally not necessary for this style.
