In the glass, the 2020 Eisele Vineyard Estate Cabernet Sauvignon shows a deep, saturated ruby to purple hue, with a youthful vibrancy that hints at its long life ahead. The nose is refined and layered rather than showy: aromas of blackcurrant, ripe blackberry, and plum intertwine with notes of graphite, crushed stone, violets, cigar box, and subtle baking spice. Hints of cedar, cocoa nib, and fresh tobacco emerge with air, underscoring its Bordeaux-like restraint. On the palate, this is poised and tightly knit, with a core of dark fruit wrapped in fine-grained, powdery tannins. Flavors of cassis, black cherry, and mulberry are lifted by notes of dried herbs, pencil shavings, espresso, and a delicate savory-mineral edge that is very much a signature of the Eisele site. Production
Sourced exclusively from the historic Eisele Vineyard in northern Napa Valley’s Calistoga AVA, this Cabernet comes from gravelly, well-drained alluvial soils at the base of the Palisades. The site’s unique combination of warm days, cool nights, and constant air flow allows grapes to ripen slowly while retaining remarkable freshness. Farmed organically and biodynamically, the vineyard is tended by hand, with rigorous bunch selection both in the rows and on the sorting table at harvest. The grapes are picked parcel by parcel at optimal ripeness, then gently destemmed and fermented in a combination of stainless steel and oak vats to preserve purity and detail. Following maceration and careful extraction, the wine is aged in French oak barrels (a significant portion new) for extended élevage, allowing the tannins to integrate and the vineyard’s mineral character to emerge without being overwhelmed by wood.

The 2020 Eisele Vineyard Estate Cabernet Sauvignon is a natural partner for refined yet flavorful dishes: think dry-aged ribeye, roast lamb with rosemary and garlic, venison, or slow-braised short ribs. It also pairs beautifully with earthy, aromatic preparations featuring wild mushrooms, truffle, or root vegetables, as well as aged, hard cheeses such as Comté, aged Gouda, or Parmigiano-Reggiano. Serve at 16–18°C (60–65°F) in generous Bordeaux stems to allow the aromatics to unfold. For current drinking, decanting for 1–2 hours is recommended; as the wine gains bottle age, a gentler 45–60 minute decant will help open the bouquet while preserving its delicacy.
