Production
The Scharzhofberger vineyard sits on steep, south-facing slopes above the Saar River, a cool tributary of the Mosel, with poor, grey Devonian slate soils that force the Riesling vines to root deeply. This combination of altitude, exposure, and slate creates wines of remarkable tension, delicacy, and minerality. Grapes for the Spätlese are painstakingly hand-harvested, often over multiple passes (selective picking) to ensure ideal ripeness and purity of fruit, while preserving vibrant acidity. In the cellar, Egon Müller follows a traditional, minimalist approach: gentle pressing, slow, natural (often spontaneous) fermentation, and aging in large, old German oak fuders. This unobtrusive vinification highlights the vineyard character and the precision of the vintage, resulting in a wine that feels both timeless and incredibly pure.

Food & Serving
This Spätlese is wonderfully versatile at the table, especially with dishes that benefit from a touch of sweetness and high acidity. It pairs beautifully with fine Asian cuisine—think sashimi, sushi, lightly spiced Thai or Vietnamese dishes—as well as classic European fare such as duck or goose with fruit accents, veal in cream sauce, or a simple roast chicken with herbs. It is also superb with soft and semi-soft cheeses (especially blue cheese) and can transition seamlessly into dessert with fruit tarts, poached pears, or citrus-based pastries. Serve well-chilled, ideally around 8–10°C (46–50°F). Decanting is not necessary, but opening the bottle 15–30 minutes before serving and allowing the wine to breathe in the glass will help its aromatics fully unfold—especially from magnum.
