Production
Sourced from the famed Scharzhofberg vineyard on the Saar, a cool, steep sub-region of the Mosel, this wine is born from grey slate soils that impart hallmark minerality and razor-sharp precision. The vines, many of them old and low-yielding, are cultivated on precipitous slopes where most work must be done by hand, ensuring meticulous fruit selection. At harvest, grapes are picked selectively in multiple passes (Auslese-like selection within Spätlese), choosing only perfectly ripe, botrytis-tinged berries where appropriate to enhance complexity. Fermentation is typically carried out with native yeasts in traditional large old foudres, allowing a slow, cool ferment that preserves aromatics and nuance. The wine rests on its fine lees, gaining texture and harmony, before bottling with a balance that leans more toward finesse and transparency than overt power.
Food & Serving
This Spätlese’s interplay of sweetness and acidity makes it surprisingly versatile at the table. It shines with spicy Asian cuisine (Thai, Vietnamese, or moderately spiced Sichuan), dishes featuring aromatic herbs, and high-quality sushi or sashimi. It is also superb with richer dishes like goose liver parfait, pâtés, and soft, creamy cheeses such as Brie or Camembert; fruit-driven desserts with stone fruit or citrus can also work well, provided they are not overly sweet. Serve well chilled, around 8–10°C (46–50°F), to highlight its precision and freshness. Decanting is not essential, but giving the wine 15–20 minutes in the glass allows the aromatics to unfurl beautifully.
