Tasting Notes
In the glass, this Kabinett shows a pale straw to light lemon color with a shimmering green hue, reflecting its youth and vibrant acidity. The nose is intensely aromatic yet refined, with notes of white peach, lime zest, green apple, and ripe pear intertwined with floral hints of jasmine and elderflower. Underneath, classic Saar minerality emerges as wet slate, crushed stone, and a faint smokiness, giving the bouquet both lift and depth.
On the palate, the wine is light-bodied but wonderfully concentrated, with a crystalline purity of fruit. Juicy stone fruit and citrus notes—think nectarine, mandarin, and lime sorbet—are balanced by a spine of racy acidity and a whisper of sweetness that feels weightless rather than rich. The finish is long, vibrating with salty, slate-driven minerality and mouthwatering tension. In magnum, the aging potential is outstanding: while already charming in its youth, it will gain complexity over 15–25 years, evolving toward honey, candied citrus, herbs, and more pronounced smokiness, while retaining remarkable freshness.
Production
Wiltinger Braune Kupp is a steep, south- to southwest-facing hillside on the Saar, composed predominantly of weathered Devonian slate that imparts the vineyard’s signature precision and mineral drive. The cool Saar climate, combined with the slope and exposure, allows for slow, even ripening, preserving acidity and aromatic complexity. Grapes are typically harvested by hand in multiple passes (selective picking) to capture optimal ripeness and pristine fruit, avoiding any overripe or botrytized berries for Kabinett. In the cellar, Egon Müller follows a restrained, traditional approach: gentle pressing, spontaneous fermentation with ambient yeasts—often in large old oak fuders and/or stainless steel—and long, slow ferments that may stop naturally, leaving a finely judged amount of residual sugar. The wine is then aged on its fine lees to build texture while preserving transparency, before being bottled to showcase the vineyard’s purity rather than any winemaking imprint.
Food & Serving
This Kabinett’s interplay of sweetness and razor-sharp acidity makes it incredibly versatile at the table. It pairs beautifully with delicately spiced Asian cuisine (Thai, Vietnamese, or lightly spiced Chinese dishes), sushi and sashimi, ceviche, and shellfish such as scallops, prawns, and crab. It also shines with white asparagus, fresh goat cheese, soft-ripened cheeses, and lighter poultry dishes, as well as simply prepared pork or veal. Serve well-chilled at around 8–10°C (46–50°F) to emphasize its precision and aromatics. Decanting is not necessary, but in magnum format you may consider opening the bottle 30–45 minutes before serving to let the wine unfurl its full aromatic spectrum.
