On the nose, expect dark fruit at the core—blackberry, black cherry and plum—layered with notes of graphite, cocoa, sweet spice, dried herbs and a touch of vanilla and toast from oak aging. Dominio de Calogía draws on the classic terroir of Ribera del Duero, where high-altitude vineyards, poor stony soils and marked diurnal temperature shifts help produce grapes with thick skins, intense aromatics and natural freshness. The Tinto is based primarily on Tinto Fino (Tempranillo), harvested by hand at optimal ripeness to ensure careful selection in the vineyard and at the winery. Vinification typically involves a gentle destemming, followed by temperature-controlled fermentation in stainless steel or concrete to preserve purity of fruit, with regular pump-overs or punch-downs for fine tannin extraction. The wine is then aged in quality oak barrels—often predominantly French, sometimes with a touch of American oak—to build texture and complexity without overwhelming the fruit, before being bottled with minimal intervention to retain its character.
