The walled vineyard dates back to Cistercian monks in the Middle Ages and has long been regarded as one of Burgundy’s most prestigious sites. Tasting Notes

Domaine Michel Noëllat sources its Clos Vougeot grapes from parcels within this historic walled Grand Cru, where the limestone-rich soils with clay and gravel provide both power and finesse. The exposure and gentle slope ensure excellent drainage and optimal ripening conditions, particularly valuable in a sunny vintage like 2020. Grapes are typically hand-harvested at optimal maturity, with careful sorting in the vineyard and at the winery to retain only the healthiest, most concentrated clusters. In the cellar, traditional Burgundian methods are combined with thoughtful modern touches. The Pinot Noir is usually partially destemmed, then fermented in temperature-controlled vats to preserve aromatics while extracting fine tannins and color. Gentle punch-downs or pump-overs help build structure without harshness. The wine is then aged in French oak barrels, a proportion of which is new, to add complexity, spice, and texture while respecting the purity of the fruit and the character of the Clos Vougeot terroir. After élevage, it is bottled with minimal intervention to capture the vineyard’s personality and the vintage’s energy.

It pairs beautifully with roast lamb, duck breast, venison, and other game, as well as beef tenderloin, veal, or braised short ribs. Classic Burgundian dishes such as coq au vin, boeuf bourguignon, and pigeon with truffle are ideal matches, as are earthy mushroom preparations, truffle risotto, and aged hard cheeses like Comté or Gruyère. Serve at 16–18°C (about 60–64°F) to show its full aromatic range and texture. Decanting for 1–2 hours in its youth will help open the bouquet and soften the structure; older bottles (10+ years) should be decanted more gently, shortly before serving, mainly to remove any sediment.
