Sourced from one of Saint-Aubin’s most prized Premier Cru sites, this Chardonnay showcases the precision and finesse that have made the Larue family a quiet insider’s favorite in the Côte de Beaune. The 2020 vintage brings both concentration and freshness, offering a wine that is already seductive yet built to evolve gracefully in large format.

Tasting Notes
In the glass, this Saint-Aubin 1er Cru shines a pale straw to light gold, with a brilliant, almost crystalline brightness that hints at its energy and tension. The nose opens with pure citrus and orchard fruit – lemon zest, ripe pear and crunchy green apple – layered with white flowers, a touch of stone fruit, and a distinct chalky, stony minerality. Subtle notes of toasted hazelnut, fresh butter and delicate vanilla speak to well-integrated oak rather than dominance. On the palate, the wine is precise and layered, offering a lovely interplay of richness and vibrancy. A core of citrus and ripe apple is framed by saline minerality and a fine, mouthwatering acidity that drives the wine through a long, focused finish. The texture is both silken and taut, with just enough weight to be gastronomic without ever feeling heavy. In magnum, this 2020 has excellent aging potential: while already approachable over the next 2–3 years, it should develop additional complexity—more honeyed, nutty and brioche-like nuances—over the next 8–12 years or more.

Production
La Chatenière is one of Saint-Aubin’s steep, south and southeast-facing Premier Cru vineyards, rooted in thin, limestone-rich soils with layers of clay and marl that naturally limit yields and accentuate minerality. Domaine Larue farms these slopes with great care, focusing on precise vineyard work to achieve optimal ripeness while preserving freshness, often with a combination of sustainable practices and careful canopy management. Grapes are typically hand-harvested to ensure pristine fruit, then gently pressed and fermented in temperature-controlled conditions, largely in French oak barrels, a modest portion of which are new. The wine is aged on fine lees, adding texture and complexity, before being assembled and bottled—here in magnum—to encourage slow, harmonious evolution.

Food & Serving
This 2020 Saint-Aubin 1er Cru La Chatenière Magnum is a versatile partner at the table, especially suited to refined dishes. It pairs beautifully with butter-poached or grilled white fish, seared scallops, lobster, and delicate shellfish, as well as roast chicken, veal in cream sauce, and dishes featuring morels or other earthy mushrooms. Creamy yet not overly rich cheeses, such as Comté, Beaufort or mild goat cheese, also work well. Serve at around 10–12°C (50–54°F) to highlight both its aromatic complexity and mineral backbone; if too cold, the wine’s nuance can seem muted. Young bottles will benefit from a brief 30–45 minute decant in magnum to allow the aromatics to open, while older magnums can simply be poured and enjoyed as they unfold in the glass.
