Production
This Corton-Charlemagne Grand Cru comes from a minute 0.22-hectare parcel situated on the famed Corton hill, facing east towards the village of Ladoix-Serrigny and running up to the edge of the forest. The steep slope and highly calcareous soils are crucial to the wine’s hallmark mineral intensity and tension, providing excellent drainage and a cool, airy microclimate that preserves acidity and aromatic finesse. The Chardonnay grapes are harvested by hand in small crates to protect the fruit, then pressed as whole clusters in a gentle pneumatic press. After pressing, the juice is cold-settled for around 36 hours under strict temperature control to clarify and preserve delicacy of aroma. Alcoholic fermentation and aging take place exclusively in oak barrels, with 100% malolactic fermentation to add texture and harmony. The wine is then matured for an extended period—around 20–22 months—in oak, allowing it to gain depth, integration, and complexity before bottling.
Food & Serving
This Grand Cru white Burgundy is a superb match for refined, richly flavored dishes that can stand up to its structure and complexity. Think lobster or langoustine with butter or cream-based sauces, scallops, turbot, or sole meunière, as well as roasted or poached turbot and halibut. It also pairs beautifully with fine poultry such as roast chicken or Bresse chicken with morel or truffle sauces, and with high-quality, not-too-strong cheeses like Comté, Beaufort, or aged Gruyère. Serve at 11–13°C (52–55°F) to showcase its precision and aromatic detail. In its youth, decanting for 45–60 minutes can help the wine open up and reveal its layered nose and textural depth, while older bottles should be handled gently and may only need a brief, careful decanting, if any.
