Tasting Notes
In the glass, the 2020 Clos des Cortons shows a deep, intense ruby color with a youthful purple rim, hinting at its concentration and long life ahead. The nose is complex and slowly unfurls with air: ripe black cherries, wild strawberries, and blackcurrant layered over notes of violet, peony, and subtle spice. As it opens, more savory and mineral nuances emerge—hints of graphite, cedar, forest floor, and a delicate touch of toasted oak. On the palate, this is a structured, full-bodied Corton with a firm backbone of tannins wrapped in ripe, dark-fruited richness. Flavors of black cherry, blackberry, and red plum are supported by a lively, precise acidity that keeps the wine fresh and lifted. There is a distinct mineral line and a saline edge that speak clearly of the Corton hillside, along with fine-grained tannins that are powerful but polished. The finish is long, resonant, and authoritative, with lingering notes of spice and earth. While the 2020 is approachable in its youth after generous aeration, it is built for cellaring and should evolve beautifully for 15–25 years or more, gaining in complexity, silkiness, and aromatic nuance.

Production
Clos des Cortons is a famed monopole vineyard on the Corton hill in the Côte de Beaune, with east- to south-facing slopes and limestone-rich clay soils that naturally produce powerful, long-lived Pinot Noir. The vines, many of them old and deeply rooted, benefit from excellent drainage and optimal sun exposure, which in 2020 delivered perfectly ripe, concentrated berries while preserving freshness. Harvesting is carried out by hand, with strict sorting in the vineyard and again at the winery to ensure pristine fruit. Fermentation typically takes place in temperature-controlled vats, with a mix of whole clusters and destemmed grapes depending on vintage character, followed by a long maceration to extract color, tannin, and aromatic intensity. The wine is then aged in French oak barrels—often with a significant proportion of new oak—allowing it to gain structure, depth, and spice without overwhelming the expression of terroir.

Food & Serving
This Grand Cru calls for refined, flavorful dishes that can stand up to its depth and structure. Ideal pairings include roast duck with cherries, côte de boeuf, venison or other game birds, braised lamb shank, or classic Burgundian dishes such as boeuf bourguignon and coq au vin. It also pairs beautifully with aged hard cheeses like Comté or Gruyère and earthy preparations featuring mushrooms or truffles. Serve at 16–18°C (about 60–64°F) to fully express the aromatics and texture. In its youth, decanting for 1–2 hours is highly recommended to soften the tannins and allow the bouquet to open; for well-aged bottles, a gentle, shorter decant just before serving is sufficient.
