Tasting Notes
In the glass, this Saint-Aubin 1er Cru typically shows a pale to medium lemon color with green highlights, reflecting its youth and freshness. The nose opens with pure citrus—lemon zest and grapefruit—layered with white peach, green apple, and subtle floral notes, supported by hints of crushed limestone, chalk, and a discreet touch of well-integrated oak (think lightly toasted hazelnut and fresh bread dough). On the palate, the 2020 En Remilly is taut yet layered, combining ripe orchard and stone fruits with a vibrant line of acidity. Flavors of lemon curd, pear, and white peach are intertwined with saline minerality and a delicate creaminess from lees aging, finishing long and mouth-watering with notes of flint and citrus peel. Production
En Remilly is one of Saint-Aubin’s star Premier Cru vineyards, perched on stony, limestone-rich slopes with thin, well-drained soils and excellent south/southeast exposure, essentially an extension of the famed Puligny-Montrachet hillside. This terroir naturally limits yields and concentrates flavor while preserving tension and finesse. Grapes are typically hand-harvested at optimal ripeness to protect the delicate Chardonnay berries and ensure precise selection in the vineyard and at the sorting table. In the cellar, Bachelet-Monnot favors a Burgundian approach focused on purity and balance: gentle pressing of whole clusters, fermentation in French oak barrels (with a restrained use of new oak), followed by maturation on fine lees. Minimal intervention and careful use of bâtonnage help the wine gain texture and complexity without overshadowing its mineral-driven profile.

Food & Serving
This Saint-Aubin 1er Cru is a superb partner for refined seafood and elegant poultry dishes. Think oysters, scallops, lobster, or turbot; roasted chicken with lemon and herbs; veal in a light cream sauce; or dishes featuring morels and delicate mushrooms. It also pairs beautifully with high-quality goat’s cheese, Comté, or mild aged cheeses that echo its nutty, mineral tones. Serve lightly chilled at around 10–12°C (50–54°F) to allow the aromas to fully open without muting the complexity.
