Tasting Notes
In the glass, the 2020 Les Folatières shows a pale to medium lemon-gold hue with youthful brightness and a subtle green rim that hints at its freshness and longevity. The nose opens with classic Puligny aromatics: white flowers, lemon zest and crisp green apple, layering into ripe pear, stone fruits and a delicate creaminess. Underneath, you’ll find flinty minerality, crushed chalk, toasted hazelnut and a whisper of fine oak spice.
On the palate, the wine is detailed and focused, with a crystalline line of acidity that cuts through its generous mid-palate. Flavors of citrus oil, juicy pear, white peach and golden apple are interwoven with notes of fresh almond, pastry cream and wet stone. Les Folatières is one of Puligny-Montrachet’s highest-regarded premier crus, known for its well-draining limestone and marl soils, sun-facing slopes and ideal exposure that produce wines of both finesse and power. Domaine Bachelet-Monnot is meticulous in the vineyard, working with low yields and careful, often manual harvesting to ensure optimum ripeness and pristine fruit. In the cellar, the Chardonnay is vinified with a light hand to preserve terroir expression: gentle pressing, fermentation in French oak (with a judicious proportion of new barrels), and extended lees aging bring texture and complexity without overshadowing the vineyard’s mineral core. The result is a wine that feels both modern in its precision and firmly rooted in Burgundian tradition.

This Puligny-Montrachet 1er Cru shines alongside refined dishes that echo its elegance and structure. Think butter-poached lobster, seared scallops, turbot or sole with beurre blanc, roast chicken with morel cream sauce, or delicate veal in a light jus. It also pairs beautifully with fine Comté, aged Gruyère or creamy cheeses served at the end of a meal. Serve slightly chilled at around 11–13°C (52–55°F) to allow the aromatics and texture to fully emerge.
