On the palate, this is a medium-bodied yet concentrated Pomerol, with a sleek, polished texture. Ripe black cherry and blackberry fruit are framed by soft, accessible tannins and a refreshing, well-integrated acidity that keeps the wine lively rather than heavy. This privileged terroir, in the immediate vicinity of estates like Pétrus and La Fleur-Pétrus, provides excellent drainage and allows the vines to dig deep for nutrients, resulting in naturally limited yields and concentrated grapes. Harvesting is carried out with great care, typically parcel by parcel, to pick each plot at optimal ripeness. In the cellar, the 75% Merlot and 25% Cabernet Franc are vinified with a focus on precision and elegance, with gentle extraction to preserve fine tannins and aromatic purity. The wine is then matured in French oak barrels (a portion new), where it gains its subtle notes of cedar and vanilla, as well as its polished texture, while maintaining a clear expression of fruit and terroir.
Food & Serving
This Pomerol is an excellent partner for refined yet comforting dishes such as roast lamb with herbs, veal chops, duck breast, or beef tenderloin with a red wine reduction. It also pairs beautifully with truffle-flavored dishes, mushroom risotto, and aged hard cheeses like Comté or aged Gouda, which echo its earthy and spicy nuances. Serve at 16–18°C (60–64°F) to highlight the wine’s aromatic complexity and supple tannins. Decanting for about 45–60 minutes in its youth is recommended to allow the fruit and oak-derived notes to fully harmonize; as it matures, a shorter decant or even serving straight from the bottle after a gentle splash will be sufficient.
