Tasting Notes
In the glass, the 2020 Château Quintus shows a deep, vibrant ruby-purple hue, hinting at both concentration and youth. The nose is layered and inviting, with ripe dark berries and plums at the core, supported by notes of black cherry, wild herbs, graphite, cedar and a discreet touch of baking spice from fine French oak. Floral accents—think violets and a trace of lilac—add lift and elegance.
On the palate, this Saint-Émilion Grand Cru is polished and finely structured. Ripe blackcurrant, blackberry and juicy plum unfold over a framework of silky yet persistent tannins. There is a beautiful interplay of richness and freshness, with well-integrated acidity carrying flavors of cocoa, tobacco leaf, and subtle vanilla through a long, poised finish. Still youthful, the 2020 already drinks well with some air, but it is clearly built to evolve gracefully over 12–20 years, gaining nuance and tertiary complexity with time in bottle.
Production
Château Quintus sits on some of the most privileged limestone and clay-limestone slopes of Saint-Émilion, combining several high-quality terroirs brought together under the ownership of Domaine Clarence Dillon. The elevated, well-exposed parcels promote excellent drainage and slow, even ripening, while the limestone subsoils contribute both minerality and natural freshness to the fruit. Grapes—predominantly Merlot and Cabernet Franc alongside a small proportion of Cabernet Sauvignon—are harvested by hand, with strict sorting to ensure only perfectly ripe berries make it into the vats. Vinification is parcel by parcel, in temperature-controlled tanks, allowing the team to respect the character of each plot before blending. Aging takes place in carefully selected French oak barrels, a proportion of them new, to add texture and complexity without overwhelming the purity of the fruit.
Food & Serving
This 2020 Saint-Émilion Grand Cru is a versatile partner at the table, pairing beautifully with roasted lamb, dry-aged beef, veal chops, and game birds such as duck or guinea fowl. It also works well with mushroom-focused dishes, truffle risotto, and hard or semi-hard cheeses like Comté, Mimolette or aged Gouda. For optimal enjoyment, serve at 16–18°C (60–64°F). Young bottles will benefit from 1–2 hours in a decanter to soften the tannins and allow the aromatics to fully open, while mature bottles should be handled more gently, with a shorter, careful decant just to remove sediment.
