Tasting Notes
In the glass, the 2020 Pichon Baron is deep, opaque ruby with a vibrant, almost inky core and a fine, youthful rim. The nose unfolds gradually with pure cassis and ripe black plum, followed by layers of cigar wrapper, sweet loamy earth, crushed violets and a subtle graphite and cedarwood edge. There is both elegance and intensity here, with each swirl revealing more aromatic detail. On the palate, the wine is full-bodied and velvety, with impressive concentration yet a remarkable sense of lift from its lively acidity. Dark fruits—cassis, black cherry and plum—are framed by rich, fine-grained, almost powdery tannins that coat the mouth without heaviness. Nuances of tobacco, cedar, cocoa and warm stones echo on a long, resonant finish. Still youthful and a touch reserved compared to the more immediate 2019, this 2020 has the architecture and balance to age gracefully for decades, especially in magnum—expect it to evolve beautifully over 15–30+ years.

Production
Château Pichon Longueville Baron sits on one of Pauillac’s prime gravel terroirs, where deep layers of well-draining gravel over limestone and clay create ideal conditions for Cabernet Sauvignon to excel. The estate’s 73 hectares are predominantly planted to Cabernet Sauvignon, complemented by Merlot, Cabernet Franc and Petit Verdot, and farmed with careful, sustainable, environmentally conscious practices to protect soil life and vine health. Grapes are meticulously harvested and sorted to ensure only perfectly ripe, healthy bunches are vinified. Fermentation takes place in temperature-controlled vessels to preserve freshness and aromatic purity, with each parcel handled separately to express its specific character. The young wine is then matured in a judicious mix of new and seasoned French oak barrels, where careful élevage builds complexity, polish and structure without overshadowing the purity of the fruit or the signature of the Pauillac terroir.

Food & Serving
This 2020 Pichon Baron is a natural partner for richly flavored, refined dishes: think roasted or grilled lamb with herbs, dry-aged ribeye, venison or other game, truffled poultry, or classic French dishes like beef Wellington and duck with a red wine reduction. It also pairs beautifully with aged hard cheeses such as Comté, mature Gouda or well-aged cheddar. Serve at 16–18°C (60–64°F) to highlight both fruit and structure. Given its youth and density, decanting is recommended—1–2 hours for more immediate enjoyment, or longer for those who prefer a more open, harmonized profile.
