The nose is sumptuous and layered, opening with ripe plum pudding, blueberry tart, and dark chocolate–coated cherries, then unfolding into cooler, more complex nuances of eucalyptus, star anise, tobacco leaf, fertile forest floor, and a touch of cedar. On the palate, the wine is full-bodied and densely packed, built "like a brick house" with massive yet beautifully polished, velvety tannins. Despite its power and muscular black and blue fruit core, there is a seamless freshness that keeps everything in perfect balance. Waves of black cherry, cassis, and ripe blueberry give way to notes of cocoa, spice, and a pronounced, stony minerality that carries through to an impressively long, layered finish. Château Pavie’s 42-hectare estate lies on the famed limestone and clay slopes of Saint-Émilion, with varied terroirs and microclimates that contribute to the wine’s complexity and depth. The property is often among the last in the appellation to finish harvesting, allowing the grapes to reach optimal ripeness while retaining freshness. Vineyard work is meticulous and increasingly sustainable, with around 70% of the vineyards currently farmed organically and a goal of reaching 100%. Once harvested, the grapes from the different plots are vinified separately to respect the character of each terroir. The 2020 blend—50% Merlot, 34% Cabernet Franc, and 16% Cabernet Sauvignon—was aged in French oak barrels, 75% of which were new, adding structure, spice, and textural richness without overwhelming the purity of fruit and the strong mineral backbone.
