The nose is sumptuous and layered: ripe plum pudding, blueberry tart and dark chocolate–dipped cherries unfurl alongside notes of eucalyptus, star anise, pipe tobacco and rich, fertile earth, all framed by a subtle touch of cedar from its French oak élevage. On the palate, this wine is built like a stone house—massive in structure yet impeccably polished. The mouthfeel is full-bodied and muscular, driven by dark and blue fruits packed into a tightly woven core. Production
The 2020 Château Pavie is composed of 50% Merlot, 34% Cabernet Franc and 16% Cabernet Sauvignon, sourced from the estate’s 42 hectares of vineyards in Saint-Émilion. Although the property is a single large holding, it encompasses several distinct terroirs with varied soils and microclimates, contributing complexity and nuance to the final blend. Pavie is typically among the last estates in the appellation to finish harvest, allowing the grapes to achieve optimal ripeness while preserving freshness. The vineyards are increasingly farmed with respect for the environment—around 70% is now managed organically, with the goal of reaching 100%. In the cellar, the wine is matured in French oak barrels, 75% of which are new, adding structure, depth and subtle toasty notes without overwhelming the fruit, and supporting its long-term evolution.

This is a monumental Saint-Émilion that shines alongside richly flavored, thoughtfully prepared dishes. Think roasted or grilled lamb with herbs, dry-aged ribeye, beef Wellington, venison or other game, as well as truffle-infused dishes and slow-braised short ribs. It also pairs beautifully with earthy preparations featuring mushrooms, lentils and root vegetables, or with aged hard cheeses such as Comté or mature Gouda. Serve at 16–18°C (60–64°F) to highlight its aromatics and structure. Decanting is highly recommended—give it at least 2–3 hours in its youth to open up the layers of fruit, spice and minerality; fully mature bottles can be decanted more gently, mainly to remove sediment.
