Tasting Notes
In the glass, the 2020 Pavillon Rouge shows a deep, radiant ruby colour with a youthful violet rim, signaling both concentration and freshness. The nose is intensely aromatic yet poised, with layers of ripe blackcurrant, blackberry and red plum interwoven with raspberry, rose petals, violets and a hint of graphite and cedar from the fine-grained oak. Subtle notes of sweet spice, tobacco leaf and pencil shavings add complexity as the wine opens.
On the palate, this is medium to full-bodied, elegant and tightly focused, with a core of pure, dark fruit wrapped in ultra‑fine, chalky tannins. Flavours of cassis, black cherry and wild berries are lifted by fresh acidity, while floral and mineral nuances echo the Margaux terroir. The oak is beautifully integrated, offering structure rather than weight, and the finish is long, graceful and persistent, with a lingering impression of spice and crushed violets. Approachable in its youth after a decant, it nonetheless has the balance and backbone to evolve harmoniously for 10–20 years in a good cellar, gaining in complexity and silkiness over time.
Production
Pavillon Rouge 2020 comes from the renowned gravelly soils of Margaux, where deep gravel over limestone and clay provides excellent drainage and the ideal conditions for Cabernet Sauvignon to achieve full ripeness while retaining freshness. The estate practices meticulous vineyard management, with low yields, careful canopy work and hand-harvesting parcel by parcel at optimal maturity. Only the most rigorous selection of lots destined not for the Grand Vin but still meeting the château’s high standards are chosen for Pavillon Rouge. In the cellar, vinification takes place in temperature‑controlled vats, with gentle extraction to preserve finesse and aromatic purity. The wine is then aged in French oak barrels (a substantial proportion of which are new, though less than the Grand Vin), allowing the varietal character and terroir expression to shine through while gaining polish, depth and refined structure.
Food & Serving
The 2020 Pavillon Rouge pairs beautifully with classic dishes such as roasted lamb, beef tenderloin, duck breast, veal, or game birds, as well as refined dishes featuring mushrooms, truffles or root vegetables. It also works well with aged hard cheeses like Comté or mature Manchego. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and textural finesse. Young bottles will benefit from 1–2 hours in a decanter to allow the bouquet to blossom and the tannins to soften; more mature bottles can be gently double‑decanted shortly before serving to preserve their delicate tertiary nuances.
