Pavillon Blanc du Château Margaux 2020 is one of Bordeaux’s most coveted dry whites, crafted entirely from Sauvignon Blanc grown on the legendary Château Margaux estate. Far from a simple ‘second label’, this cuvée has earned a reputation as the finest white wine of the Médoc, combining crystalline precision with grand cru depth. The 2020 vintage, from a particularly warm and sunny year, delivers a beautifully pure, finely etched expression that showcases both the pedigree of the terroir and the meticulous touch of the estate’s winemaking team.

Tasting Notes
In the glass, the 2020 Pavillon Blanc is bright and luminous, with a pale straw color and subtle green reflections that hint at its youthful vibrancy. The nose opens slowly but with great precision, revealing layered aromas of fresh pineapple, lime blossom, orange zest and lemon curd, interwoven with notes of yuzu peel, wet river stones, flint and a delicate kumquat lift. With air, the bouquet gains in complexity, adding subtle floral and mineral nuances without ever becoming heavy. On the palate, this is medium-bodied yet tense and vibrant, a Sauvignon Blanc of finesse rather than sheer power. A cascade of citrus—lemon, grapefruit, and lime—meets juicy exotic fruit tones, all framed by a pronounced, chalky minerality. The texture is silky but driven by a racy, mouthwatering acidity that keeps the wine incredibly fresh and linear. The finish is very long, lingering with citrus oils, saline notes and a whisper of smokiness, hinting at impressive aging potential. While already seductive in its youth, 2020 Pavillon Blanc is built to evolve gracefully for 10–15 years or more, developing additional complexity and a creamy, layered mouthfeel with time in bottle.

Production
Pavillon Blanc is sourced from approximately 12 hectares of Sauvignon Blanc vines planted on the privileged gravel and sandy-gravel soils of the Château Margaux estate in the Médoc. These well-drained, heat-retentive soils, combined with the mild maritime climate of Bordeaux, allow for slow, even ripening and a particularly pure, aromatic expression of the grape. Yields are kept deliberately low, and harvesting is done by hand in successive passes to ensure that only perfectly ripe, healthy bunches are selected. In the cellar, the must is handled with great delicacy: fermentation typically takes place at controlled temperatures to preserve aromatic freshness, followed by élevage—often in a proportion of new French oak—designed to add texture and complexity without overshadowing the wine’s intense fruit and mineral character. The result is a meticulously crafted, grand-vin style white that stands apart in the Médoc.

Food & Serving
This refined white Bordeaux shines alongside elegant, delicately flavored dishes that allow its aromatic complexity and minerality to take center stage. Think pristine seafood—oysters, scallop carpaccio, turbot, sole, lobster or langoustines—along with sushi and sashimi, grilled white fish with citrus butter, or fine poultry in light cream or lemon-based sauces. It also pairs beautifully with fresh goat’s cheese, mild sheep’s cheeses and subtly herb-inflected vegetable dishes such as asparagus, fennel or pea risotto. Serve well-chilled, ideally at 10–12°C (50–54°F), to highlight its freshness and precision. A brief decant of 20–30 minutes, especially in its youth, helps the wine open up aromatically and reveal its full spectrum of citrus, floral and mineral notes.

Situated near the village of Margaux in the heart of the Médoc, the property encompasses around 94 hectares under vine, with 82 hectares devoted to red varieties and 12 hectares to white, planted to 100% Sauvignon Blanc for Pavillon Blanc. Beyond its world-famous Grand Vin and Pavillon Rouge, the estate has, since 2009, also released a third wine, Margaux du Château Margaux, continuing a tradition of rigorous selection that dates back generations. Pavillon Blanc itself has long been regarded as the benchmark white wine of the Médoc, a rare and highly sought-after bottling that demonstrates the château’s ability to bring first-growth precision and elegance to both red and white wines alike.
