In the glass, the 2020 Château l'If shows a deep, vibrant ruby-purple hue, hinting at both concentration and youth. The nose is perfumed and pure, with layers of ripe black cherry, wild plum, and blackberry, lifted by floral notes of violets and dried rose petals. Subtle hints of graphite, crushed stone, and fine cedar emerge with air, along with a touch of cocoa and gentle spice from well-judged oak.
On the palate, this is poised and silky, with a core of dark, juicy fruit wrapped in ultra-fine tannins. Expect flavors of black cherry, blackcurrant, and damson, interwoven with notes of licorice, cocoa nib, and a distinctive limestone-led minerality that brings energy and length. Château l'If lies on the prized limestone and clay-limestone soils of Saint-Émilion, a terroir renowned for producing Merlot-based wines of finesse, tension, and aromatic depth, often complemented by Cabernet Franc for structure and lift. The vineyards are typically worked with great care, with a focus on low yields and meticulous selection in the vineyard and at the sorting table to ensure only perfectly ripe, healthy grapes are used. Harvest is carried out parcel by parcel, often by hand, to capture each plot at optimum maturity. In the cellar, fermentation takes place in temperature-controlled vats, with gentle extraction to preserve finesse rather than sheer power. Ageing occurs in French oak barrels (a portion of which are new), where the wine matures and integrates, gaining texture and complexity while maintaining the clarity of fruit and the distinct expression of the limestone plateau.
Food & Serving
The 2020 Château l'If Saint-Émilion is an excellent partner for refined, flavorful dishes that match its elegance and depth. It pairs beautifully with roast lamb or beef, duck breast with a red wine reduction, veal chops, or game birds such as pigeon. It also works very well with earthy components—think wild mushrooms, truffle dishes, and slow-cooked lentils—as well as aged hard cheeses like Comté or English Cheddar. Serve at 16–18°C (60–64°F) to highlight both fruit and structure. For current drinking, decanting for 1–2 hours is recommended to allow the wine to open and show its full aromatic range; as it gains bottle age, a shorter decant of around 30–45 minutes will usually suffice.
