Production
Château Latour à Pomerol’s vineyards are situated on some of the appellation’s most distinguished terroirs, a mosaic of gravelly soils over deep clay, very close to such icons as Pétrus and Trotanoy. This mix of gravel, which brings finesse and aromatic lift, and rich clay, which lends power and depth, is particularly well-suited to Merlot, the dominant grape here, with smaller proportions of Cabernet Franc adding structure and complexity. Harvesting is carried out parcel by parcel, typically by hand, to ensure optimal ripeness and selection of only the best clusters. In the cellar, the grapes are carefully sorted and vinified in temperature-controlled vats, with gentle extraction to preserve elegance and purity of fruit. The wine is then aged in French oak barrels—typically with a significant but judicious proportion of new oak—to refine its tannins, build texture and add subtle layers of spice and toast, all while maintaining the clarity of the fruit and the signature Pomerol character.

Think classic roast lamb with rosemary, beef tenderloin or côte de boeuf, veal chops, duck breast, or game birds like pigeon. It also pairs beautifully with mushroom-based dishes—truffle risotto, wild mushroom ragout, or a simple roast chicken with morels—as well as aged hard cheeses such as Comté or aged Gouda. Serve at 16–18°C (about 60–65°F) to highlight both fruit and structure. In its youth, decanting for 2–3 hours will help the wine open up and reveal its full aromatic complexity; as it matures, a shorter decant of about an hour is usually sufficient to awaken the bouquet without overexposing the wine.
