Tasting Notes
In the glass, the 2020 Cos d’Estournel Blanc shines a pale to medium straw-gold, with glints of green that hint at its freshness and youth. The nose is generous and layered, opening with dried tropical fruits like mango and green papaya, followed by lemon zest, green apple, and subtle notes of white flowers and crushed stone. Hints of grapefruit pith, lime leaf, and a delicate touch of spicy oak add further complexity as it evolves in the glass.
On the palate, this is both full-bodied and finely etched: a rich, almost velvety mid-palate driven by ripe fruit is counterbalanced by a firm, linear acidity. Flavors of citrus oil, green apple, and mango are wrapped around a core of saline minerality and gentle toast, leading into a long, persistent finish with impressive tension and length. Cos d’Estournel Blanc is sourced from carefully selected plots whose deep-rooted vines draw character from a mosaic of clay and gravel soils near the Gironde estuary. This privileged location provides ideal drainage, excellent exposure, and natural ventilation, yielding grapes with both concentration and freshness. The vineyards are farmed using sustainable methods and managed plot by plot, with regular ploughing to encourage deep root systems and preserve soil life. Harvesting is typically carried out in small, precise picks at optimal ripeness to protect aromatic intensity and natural acidity. In the gravity-fed winery, the grapes are handled gently; the must is settled and then fermented in temperature-controlled vessels, often with a portion matured in oak barrels. This careful vinification and élevage lend the wine its balance of richness, texture, and refined structure, while preserving the clarity of its fruit and terroir expression.

This refined white Bordeaux pairs beautifully with sophisticated seafood dishes such as scallops in a light citrus beurre blanc, grilled turbot, lobster, or poached sole with fennel. It also works wonderfully with roast chicken, veal in cream sauce, or dishes featuring seasonal vegetables and herbs—think asparagus risotto, creamy morel mushrooms, or a fine goat’s cheese tart.
