The blend is predominantly Merlot, complemented by around 10% Cabernet Franc and 5% Cabernet Sauvignon, each variety benefiting from the cool, well-draining limestone subsoils that promote deep root systems and natural concentration. The grapes are harvested in four separate passes to capture optimal ripeness parcel by parcel, then vinified in small barrels rather than tanks—a deliberate choice given the tiny volumes, allowing incredibly precise micro‑vinification and gentle extraction. Aging in fine French oak (with a significant proportion of new barrels) polishes the tannins and adds subtle spice without overshadowing the vineyard’s distinctive mineral signature.
