The 2020 Château Canon-La Gaffelière Saint-Émilion Premier Grand Cru Classé is a striking example of modern Right Bank Bordeaux at its most refined and expressive. Tasting Notes
In the glass, the 2020 Château Canon-La Gaffelière shows a medium to deep garnet-purple color, with a vibrant, almost luminous core. The nose is seductive and layered, opening with floral tones of lilac, jasmine, and violets, followed by bright red fruits such as cherry and raspberry. With air, darker notes unfurl: ripe black plum, wild blueberry, and blackcurrant, interlaced with dark chocolate, Sichuan pepper, cumin, and a subtle ferrous, mineral edge.
On the palate, this is medium to full-bodied, combining impressive intensity of blue and black fruits with a remarkable sense of precision. The tannins are firm yet ultra-fine, giving a polished, graphite-like frame to the rich fruit. A lively, mouthwatering freshness runs through the wine, balancing its concentration and leading to a long, resonant finish that cascades with fruit, spice, and mineral nuances. Young, it benefits from decanting to fully reveal its complexity, but it clearly has the depth and structure to age gracefully for 15–25 years or more in a suitable cellar.
Production
Château Canon-La Gaffelière lies on the south-facing slopes just outside the medieval village of Saint-Émilion, where clay-limestone and sandy-clay soils over a complex subsoil give both power and finesse to Merlot, Cabernet Franc, and Cabernet Sauvignon. The estate is known for meticulous, often organic-leaning vineyard practices, strict selection, and deliberately low yields to ensure maximum concentration and purity. Grapes are harvested parcel by parcel at optimal ripeness, then carefully sorted before vinification in temperature-controlled vats. Fermentation and maceration are managed to extract fine, silky tannins rather than brute force, followed by élevage in French oak barrels (a significant proportion new) to integrate texture, enhance complexity, and respect the character of the fruit and terroir.
Food & Serving
This Saint-Émilion is a natural partner for refined meat dishes: think roast lamb with herbs, beef ribeye, veal chops, or game birds like duck and pheasant. It also pairs beautifully with earthy dishes such as wild mushroom ragout, truffle risotto, and aged hard cheeses like Comté, aged Gouda, or farmhouse cheddar. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and freshness. In its youth, decant for 1–2 hours to soften the tannins and allow the floral and spice notes to bloom; with maturity, a gentle 30–45 minute decant is enough to remove sediment and let the wine fully express itself.
