Grapes are typically harvested by hand, parcel by parcel, to capture optimal ripeness and preserve the character of each plot. In the cellar, the estate combines traditional and modern techniques: fermentation takes place in a combination of vats with careful temperature control, while élevage is carried out in a thoughtful mix of new oak barrels, used barrels, and amphorae. This nuanced approach to aging emphasizes purity of fruit, fine tannin texture, and the signature limestone-driven energy of the terroir rather than heavy oak influence.

This Saint-Émilion Grand Cru is an excellent partner for classic dishes such as roast lamb with herbs, beef ribeye, duck breast, and veal chops, as well as richer dishes like venison, game birds, or braised short ribs. It also pairs beautifully with mushroom-based dishes, truffle risotto, and aged hard cheeses such as Comté or mature Gouda. Serve at 16–18°C (60–64°F) for optimal expression.
