The 2020 Bodegas Catena Zapata Adrianna Mundus Bacillus Terrae is one of Argentina’s most coveted Malbecs, sourced from the fabled Adrianna Vineyard in Gualtallary, Mendoza. Sitting at an impressive 1,480 meters above sea level, this single-vineyard wine captures an almost Burgundian sense of precision and minerality while remaining unmistakably Andean in character. Produced only from a specific high-altitude parcel where the Malbec vines can absorb an optimal balance of nutrients, it is widely regarded as a true “grand cru” expression of the Adrianna estate. This cuvée stands out for its combination of intensity and finesse: vibrant freshness, layered complexity, and a remarkably refined structure that promises long life in the cellar. Since 2011, Adrianna’s top bottlings have been separated into distinct micro-terroir wines—Mundus Bacillus Terrae, Fortuna Terrae, and River Stones—each highlighting a different facet of this legendary vineyard; Mundus Bacillus Terrae is the most ethereal and mineral-driven of the trio.

Tasting Notes
In the glass, the 2020 Mundus Bacillus Terrae shows a deep, luminous violet-ruby hue with a youthful, almost electric rim—classic high-altitude Malbec color, dense yet bright. The nose opens initially with a subtle creamy, lactic note in very young bottles, which soon evolves into a complex aromatic profile of wild blueberries, black cherries, and fresh plums interwoven with violet, lavender, and graphite. With air, more high-altitude nuances emerge: crushed limestone, wet stone, fennel seed, and a whisper of citrus zest that lends lift and definition. On the palate, the wine is precise and tension-driven rather than heavy, with medium to full body carried by vibrant acidity and ultra-fine, chalky tannins. Dark berry fruit—boysenberry, blackcurrant, and macerated cherry—meets savory notes of thyme, black tea, and subtle cocoa, all wrapped in a distinct saline, mineral edge that is a hallmark of Gualtallary’s calcareous soils. The used oak is beautifully integrated, adding texture and gentle spice without overshadowing the fruit. The finish is long, linear, and refreshing, with lingering notes of citrus peel, florals, and stone dust. This 2020 has excellent aging potential; it will reward patience over 12–20 years, gaining greater aromatic complexity, truffle and tobacco nuances, and even silkier tannins with time in the cellar.

Production
Adrianna Vineyard lies in Gualtallary, at the cool, windswept northern edge of the Uco Valley in Mendoza, where extreme altitude, intense sunlight, and cold nights combine to create wines of striking tension and purity. The Mundus Bacillus Terrae plot is defined by poor, limestone-rich, alluvial soils populated with unique microbial life—hence the name, a nod to the microorganisms that influence vine health and flavor development. Grapes are painstakingly harvested by hand at optimal ripeness, with strict selection both in the vineyard and at the winery to ensure only the finest clusters make it into the final wine. In 2020, a high proportion of whole clusters was used, adding aromatic lift and structural complexity. Fermentation took place in concrete vats with native yeasts, preserving the vineyard’s distinct character and enhancing texture. The wine was then aged for around 18 months in used French oak barrels, allowing slow evolution and refinement without overt oak flavors, and bottled to express the Adrianna terroir as transparently as possible.

Food & Serving
This is a gastronomic Malbec that shines with refined, savory dishes rather than heavy sauces. Think grilled or roasted lamb, dry-aged ribeye, or veal chops seasoned simply with herbs and sea salt, as well as duck breast, venison, or other game prepared with earthy accompaniments like wild mushrooms, lentils, or root vegetables. It also pairs beautifully with truffle-infused dishes, aged hard cheeses, and richly flavored vegetarian plates featuring eggplant, black beans, or charred cauliflower. Serve at 16–18°C (about 60–64°F) to showcase its freshness and aromatic complexity. Given its youth and structure, decanting for 1–2 hours is highly recommended in the near term, both to shed any initial creamy or lactic notes and to let the citrusy, mineral and floral dimensions fully unfold in the glass.
