Tasting Notes
In the glass, the 2020 Colore shows a vibrant, deep ruby hue with garnet highlights at the rim, hinting at both concentration and finesse. The nose is immediately seductive: wild cherries, ripe red plum, and raspberry coulis unfurl alongside blood orange zest, violet, and rose petals. Subtle notes of sweet tobacco, cedar, dried herbs, and a touch of spice (clove, sandalwood, white pepper) add layers of complexity as it opens.
On the palate, the wine is precise and energetic, with a core of pure red fruit—sour cherry, cranberry, and pomegranate—wrapped in fine, chalky tannins. There is a beautiful tension between ripeness and freshness, supported by vibrant acidity that keeps the wine lifted and linear. Production
Colore is crafted from old-vine Sangiovese (often complemented by small proportions of traditional Tuscan varieties such as Canaiolo and Colorino) grown in high-altitude sites around Tuscany, particularly in the hills overlooking Florence and central Tuscany. These vineyards, often with stony, well-drained galestro and sandstone soils, naturally limit yields and concentrate flavor. Grapes are painstakingly hand-harvested, with strict selection both in the vineyard and at the winery to ensure only the best clusters make it into the final blend. Fermentation traditionally takes place in small, open-top vats or barriques, with gentle extraction to preserve finesse. The wine is then aged—typically in a combination of French oak barrels (often mostly used rather than new) and possibly large casks—allowing the Sangiovese purity, aromatic detail, and mineral backbone to remain at the forefront while gaining polish and complexity.
Food & Serving
The 2020 Colore is a natural partner for refined yet flavorful dishes such as bistecca alla fiorentina, herb-crusted lamb racks, slow-braised beef with Tuscan herbs, or roasted game birds. It also pairs beautifully with truffled risotto, porcini mushroom dishes, aged Pecorino Toscano, and other firm, mature cheeses. Serve at 16–18°C (60–64°F) to highlight both aromatics and structure. Decanting for 1–2 hours is recommended in its youth to allow the wine to fully open and reveal its layered bouquet and finely woven tannins.
