After gentle pressing, the must is fermented in French oak barrels, a portion new but used judiciously, to add texture and complexity without overpowering the wine’s inherent freshness. The wine then matures on fine lees, with occasional bâtonnage depending on the character of the vintage, before being bottled with minimal intervention to preserve the purity of its grand cru terroir.
