The nose is immediately refined and pure: lemon zest, crisp green apple and white peach are layered over delicate white flowers and fresh almonds. Beneath the primary fruit lies a classic Puligny-Montrachet minerality—wet stone, chalk and a faint sea-breeze salinity. Gentle notes of vanilla pod, lightly toasted hazelnut and fresh brioche reveal discreet but high-quality oak.
On the palate, the wine is taut, linear and focused, with a fine thread of citrus—lemon, lime and grapefruit—framing juicier notes of pear and stone fruit. The texture is both silky and chiselled: a core of ripe fruit wrapped in a vibrant, mouth-watering acidity. Production
Benoît Ente farms small, carefully tended parcels in Puligny-Montrachet, where thin, chalky limestone soils mixed with clay and gravel provide ideal conditions for Chardonnay to express both finesse and minerality. The vineyards benefit from a temperate continental climate, with cool nights preserving acidity while the 2020 growing season delivered excellent ripeness and concentration. Ente is known for his rigorous work in the vines—low yields, careful canopy management and predominantly manual work to ensure only perfectly healthy, ripe grapes reach the cellar. Harvest is conducted by hand, often in small picking teams to allow for precise selection directly in the vineyard, followed by further sorting upon arrival. In the cellar, the grapes are gently pressed and the must is settled before fermentation in French oak barrels, a portion of which are new but never excessive. Fermentation and élevage on fine lees add texture and complexity, with bâtonnage (lees stirring) used judiciously to maintain freshness and tension. The wine is typically aged for around a year in barrel, followed by a period of resting in tank to harmonise before bottling with minimal intervention to preserve the clarity and character of the terroir.

Think seared scallops with a light citrus butter, turbot or sole meunière, poached lobster, or simply grilled langoustines. It also pairs beautifully with roast chicken, veal in a light cream sauce, or delicate mushroom dishes, as well as fine, not-too-strong cheeses such as Comté, aged Gruyère or nuttier goat cheeses. Serve chilled but not too cold—around 11–13°C (52–55°F) is ideal—to allow the aromatics to fully unfold. Young bottles will benefit from 30–45 minutes in a decanter or a generous swirl in large Burgundy stems to open up; more mature bottles should be handled gently and may only need a brief aeration just before serving.
